I found this recipe in the cookbook Gardening and Cooking with Diane. If you are a vegetarian you could leave out the bacon or substitute with artificial bacon bits.
- 1 bunch broccoli floret, chopped
- 1⁄2 red onion, chopped
- 1⁄2 cup raisins
- 1⁄2 cup sunflower seeds
- 1⁄2 cup nuts, chopped
- 1 cup celery, chopped
- 1⁄2 lb bacon, fried crisp
- 1 cup mayonnaise
- 1⁄4 cup vinegar
- 1⁄4 cup sugar
- Break bacon into pieces and add just before serving.
- Toss together the broccoli, onion, sunflower seeds, raisins, nuts, celery and bacon.
- Mix dressing ingredients (mayonnaise, vinegar, sugar) well and pour over salad and serve.
I also dislike it when people change recipes and then feel the nerve to rate it. BUT, I was looking for the perfect Broccoli Salad to meet our desires. So I had to combine this with a couple of others, one of them being #173727 from here. This recipe calls for "1 bunch broccoli florets", more specifically, I use 1 1/2 lbs. I use 1 cup of dried cranberries rather then the 1/2 cup of raisins. 1/2 to 1 cup sunflower seeds, sometimes baco bits rather then bacon (added at the end). 1/2 cup mayo rather then 1 cup. 1/4 cup plain yogurt. This is a much healthier version and way more tasty then the other that doesn't call for the bacon or onion. Thanks, and I hope you don't mind me tweaking
I made this for lunch today and I really like it! The celery was a nice touch. I used artificial bacon bits, and green onions. Thanks Kay! —
