Nuts and Berries Baked Oatmeal

- 3 cups skim milk, plus more for serving if desired
- 1 egg
- 3 tablespoons brown sugar, packed (I also add a few packs of splenda)
- 1 1⁄2 tablespoons butter, unsalted
- 1⁄4 teaspoon salt (I use sea salt)
- 1 teaspoon vanilla extract
- 2 teaspoons ground cinnamon
- 2 cups old fashioned oats (I use extra thick)
- 1 1⁄2 cups unsweetened chunky applesauce
- 1⁄2 cup dried cranberries, finely chopped
- 1⁄2 cup walnuts, finely chopped
directions
- Preheat the oven to 350F degrees.
- Coat a 10-13 in square pan with nonstick spray.
- In a large saucepan, bring the milk, brown sugar, salt, butter to almost a boil, remove from heat and add vanilla and cinnamon.
- Meanwhile, in a large mixing bowl, mix together the oats, apple sauce, cranberries, and nuts; spread evenly into the prepared pan.
- Pour milk mixture evenly over the oatmeal mixture.
- Bake uncovered for 30-35 minutes, ore until the liquid has been absorbed and the oatmeal is tender.
- Cut the mixture into 6 servings, scooping each out into a cereal bowl.
- Enjoy!

This is quite good! I used unsweetened almond milk in this. I added a relatively substantial amount of splenda (just opened the bag and poured) since I like these types of things pretty sweet. My applesauce was homemade and I used pecans instead of walnuts due to personal preference. This has a great consistency. I love the little bits of nut and the sweet/tart cranberries. I made this to portion into individual servings and then pull for breakfast on the run. Thanks so much for sharing.
