Nuts and Berries Baked Oatmeal

  • Preheat the oven to 350F degrees.
  • Coat a 10-13 in square pan with nonstick spray.
  • In a large saucepan, bring the milk, brown sugar, salt, butter to almost a boil, remove from heat and add vanilla and cinnamon.
  • Meanwhile, in a large mixing bowl, mix together the oats, apple sauce, cranberries, and nuts; spread evenly into the prepared pan.
  • Pour milk mixture evenly over the oatmeal mixture.
  • Bake uncovered for 30-35 minutes, ore until the liquid has been absorbed and the oatmeal is tender.
  • Cut the mixture into 6 servings, scooping each out into a cereal bowl.
  • Enjoy!

  1. This is quite good! I used unsweetened almond milk in this. I added a relatively substantial amount of splenda (just opened the bag and poured) since I like these types of things pretty sweet. My applesauce was homemade and I used pecans instead of walnuts due to personal preference. This has a great consistency. I love the little bits of nut and the sweet/tart cranberries. I made this to portion into individual servings and then pull for breakfast on the run. Thanks so much for sharing.
