  • Add oil to a large pot and bring to medium high heat.
  • Add chicken working a batch at a time, 2 to 3 batches, you're looking to brown the chicken, not cook it. Set each batch aside in a bowl as it completes.
  • Put onion, celery, and potato in the pot, reduce heat to medium, and cook vegetables until onions begin to turn translucent.
  • Add garlic and ginger, cook and stir for 2 minutes.
  • Add beef broth, cabbage, and noodles.
  • Cover and boil until noodles are ready.
  • Add salt and pepper to taste, serve.
