My Grandma's Carrot Bread

"This recipe was my grandma's, who gave it my my mother, who gave it to me! Hopefully I read her hand-writing correctly! I love all quick breads but I REALLY love homemade. The Nutmeg listed in the recipe is optional, and so are the raisins and nuts. We always made it for the holidays, but it could really be made any time. I may try to make a healthier version someday, but for now here it is."

  • Cream oil and sugar. Add eggs. Sift together dry ingredients; add to creamed mixture. Add carrots, pecans and raisins. Mix thoroughly. Pour mixture into a greased loaf pan and bake at 350 degrees for 1 hour. Yield 12 servings.
