Mushrooms in Creamy Wine Sauce

"This type of dish is popular all over Eastern Europe where mushrooms are one of their favorite vegetables. Sometimes this is served as a side dish and other times you can spoon it over bread or I like it over baked potatoes."

  • Heat oil in a large nonstick skillet over medium heat. Add mushrooms and green onions. Cook, stirring frequently, 4 minutes.
  • Sprinkle with flour, broth, nutmeg, pepper and salt. Stir into mushrooms and onions.
  • Stir in milk and then wine. Continue to cook and stir for 2 minutes.
  • Spoon into a serving dish.

  2. I used sliced fresh mushrooms, chicken broth, and a light cream to fill pastry shells as a nice and easy side to an oven roaster. TFS, made for Aus/NA recipe swap #57.
     
  3. Delicious and so quick to make. We love mushrooms and half a batch of this piled on top of out-of-the-oven grainy bread made a perfect lunch for two. I sliced my mushrooms, added some chopped chives and used Spanish onion as that is what I had on hand. I don't mind a sauce being a bit runny when a dish like this is served over bread, so in future I'd probably reduce the amount of flour or leave it out all together. Either way, this is an excellent recipe. Thanks for posting.
     
  4. I made this as a filling for medium sized pastry cases. I chose to make 1.5 times the amount, with twice as much sauce. Even then, there was only about three servings, nowhere near the amount suggested. When I made it, I only had full cream milk. I did think that the method was a little different, but I wanted to be true to the recipe so I didn't change it. Unfortunately what I thought would happen occurred- the sauce split after adding the milk and wine. Next time I would make it more traditionally and add the wine first, cook off the alcohol then add the milk to prevent this from happening. This might not have happened if I used the skim milk due to the lower fat content. I also added parsley at the end, and a little Tabasco, and a few good dollops of thickened cream as it still didn't have enough sauce for me. Overall a good base recipe.
     
  5. YUM! These little morsels were terrific and so easy to throw together. I liked that it used some flour and low fat milk because the cream would have piled on the calories! I enjoyed these on steak that I marinated in Recipe #432326. Made for Holiday tag. Thanks morgainegeiser! :)

<p>6/6/11- We bought another old house in Michigan at the end of January, with more room, but still with a small kitchen - lol! I did spend three months renovating the kitchen and it is very retro. It is bigger than the hobbit house kitchen, but still small. I also finished another degree - this time in small business and am now currently working full time on my small mobile art&nbsp;business. I sometimes miss working with the elderly as a mental health therapist, but for the time being I am doing what I had always wanted to do for many years. Plus I am enjoying fixing up my new old house.</p> <p>1/1/11 - Just a quick update on my profie, considering its been a few years since I updated. I still love to cook and we are currently looking for a new house, preferably another old house, but one with a larger kitchen. I have recently had some GI issues which are causing me to look differently at food. In the next few months you will start to see me post some new recipes that will be good, healthy and appropriate to those who suffer from digestive problems and IBS.</p> <p>I live in Michigan at this time, but have lived in several different states and countries. I like to cook and have recently been striving to cook healthy. I am an artist and therapist by profession. I enjoy walking, reading and making cards. I am also presently working on another degree to add to my collection of two bachelors and two masters degrees. The latest challenge is an online degree in small business management. <br /><br />I believe I probably cook in one of the smallest kitchens around. We live in an official bungalow, is even listed on the national registry. However, bungalow must mean very small, we nicknamed our house the hobbit house. The kitchen is equipped with a 1929 mini stove, limited pot space on the stove. We recently got a new refrigerator - almost standard size, except shorter - the old coil on the outside one died. I have so little room, I store the majority of my cooking items and can goods in the basement. My challenge is to be the best chef I can, despite my cooking environment.
