These cookies are so easy and we frequently requested Mum make these for our lunch boxes when we were kids. Just the smell of them baking brings back great childhood memories. Cookies can be made as big or as small as you like so the serving size is only an estimate.
- 2 eggs, beaten
- 1 cup self raising flour
- 1⁄2 cup sugar
- 1 drop vanilla essence
- 1 pinch salt
- 115 g butter
- 3⁄4 cup of chopped dates or 3⁄4 cup sultana
- corn flakes
- Cream butter and sugar together.
- Add beaten eggs to the above mix then add the rest of the ingredients except for the corn flakes.
- Mix well.
- Drop teaspoons of mix into corn flakes to cover then bake for 15 minutes or until lightly brown.
