Multigrain–oatmeal-Craison Spice Muffins

ingredients
- 3 cups oatmeal
- 1 1⁄4 cups white flour
- 1 1⁄4 cups multigrain flour
- 2 teaspoons cinnamon
- 2 teaspoons allspice
- 1 teaspoon clove
- 2 teaspoons baking powder
- 1 1⁄2 teaspoons baking soda
- 2 cups unsweetened applesauce
- 1 cup milk
- 1 cup brown sugar
- 1⁄2 cup oil
- 2 tablespoons oil
- 1 cup craisins
- 2 eggs
directions
- Preheat oven to 400 degrees.
- Combine oatmeal, flour, spices, baking powder and baking soda.
- Add applesauce, milk, brown sugar, oil and egg; mix until moistened.
- Add Craisons.
- Put in muffin papers.
- Bake 20 minutes.
- ENJOY!

I was in the mood for a spice cake for breakfast and this recipe seemed to fit the bill. I bought the craison's (cherry flavored, which I love) and my spouse and kids asked that I not add them (they don't like them)..... the muffins are great, but I sure wish I added the craisons. I would also add more spice as other suggested.. again, just personal preference.

These muffins are absolutely delicious! I added double the spices, as suggested by previous reviewers, and am I ever glad I did! I also mixed up 1 1/2 tbsp sugar and 1/4 tsp cinnamon and sprinkled the tops with this to make a lovely crunchy and sweet top. These were super yummy! This recipe halves nicely, and made a perfect dozen. Thanks for sharing this recipe - I'll make it regularly! Made for PAC Fall 2009 - you were adopted!
