Multigrain–oatmeal-Craison Spice Muffins

"I was craving an oatmeal muffin with a bit more "kick." I added spices that are typically found in spice cake recipes. I am always trying to find ways to sneak in more nutrition so I also make them with multigrain flour. These muffins are moist and delicious. I adapted this recipe from fellow member Kree. Thank you for all of you that nominated this recipe for PAC. It is an honour. I have increased the spices since I originally posted this recipe. I hope you enjoy!!"

  • Preheat oven to 400 degrees.
  • Combine oatmeal, flour, spices, baking powder and baking soda.
  • Add applesauce, milk, brown sugar, oil and egg; mix until moistened.
  • Add Craisons.
  • Put in muffin papers.
  • Bake 20 minutes.
  • ENJOY!

  1. An excellent muffin recipe!Very moist!I used whole wheat flour instead of multi-grain.I added 1/4 cup each of ground flax seed and wheat germ.I also added 1/2 tsp ginger and used raisins instead of craisins.
     
  2. A tasty, hearty muffin! We doubled the cinnamon, and next time we might leave out or decrease the cloves (personal preference). Adding nuts and subbing butter instead of the oil might be really good as well.
     
  3. I was in the mood for a spice cake for breakfast and this recipe seemed to fit the bill. I bought the craison's (cherry flavored, which I love) and my spouse and kids asked that I not add them (they don't like them)..... the muffins are great, but I sure wish I added the craisons. I would also add more spice as other suggested.. again, just personal preference.
     
  4. These muffins are absolutely delicious! I added double the spices, as suggested by previous reviewers, and am I ever glad I did! I also mixed up 1 1/2 tbsp sugar and 1/4 tsp cinnamon and sprinkled the tops with this to make a lovely crunchy and sweet top. These were super yummy! This recipe halves nicely, and made a perfect dozen. Thanks for sharing this recipe - I'll make it regularly! Made for PAC Fall 2009 - you were adopted!
     
  5. Very tasty muffin. Moist inside and crunchy outside. I, too, may increase spices next time, because we like them spicy. Made for Fall 2009 PAC.
