Mother's Rhubarb Crunch

Simple, delicious, old-fashioned. My mother always grew rhubarb in her yard. This was my favorite way to enjoy it.

  1. Mix the flour, oatmeal, brown sugar, butter and cinnamon until crumbly.
  2. Press 1/2 of the mixture into a greased 8x10x2 glass dish.
  3. Cover mixture with diced rhubarb.
  4. Combine the sugar, cornstarch, water and vanilla in a saucepan.
  5. Simmer until thickened.
  6. Pour over fruit.
  7. Cover with remaining crumb mixture.
  8. Bake 1 hour in 350°F.
  9. Serve warm with a scoop of vanilla ice cream.
