Mom's Peach Cobbler

ingredients
- 1 cup sugar
- 1 tablespoon cornstarch
- 1 cup water
- 3 cups peaches, sliced
- 1 cup flour
- 1 1⁄2 teaspoons baking powder
- 1⁄2 teaspoon salt
- 3 tablespoons shortening
- 1⁄2 cup milk
- 2 tablespoons butter
- 1 tablespoon cinnamon
directions
- Heat oven to 400 degrees.
- mix sugar and cornstarch.
- gradually stir in water.
- bring to boil and boil 1 minute, stirring constantly.
- add peaches then pour into 1 1/2 quart baking dish.
- dot with butter.
- sprinkle with cinammon.
- stir flour, sugar, baking powder, salt in bowl.
- cut in shortening until mixture looks like "meal".
- stir in milk.
- drop by spoonfuls onto hot fruit
- bake 25 to 30 minute.
- serve warm.

I was looking for a quick recipe using shortening and came across this. It really didn't take more than ten min. to assemble. I used fresh peaches (about 3 1/2 cups). There was a lot of syrup compared to the peaches, but it was especially tasty eaten by the spoonful! I did find this to serve about 4 med. servings. Thanks NewHopeDMN, for posting Mom's peach cobbler. Roxygirl
