  1. Preheat oven to 375 F degrees.
  2. Cookie: Cream butter, sugar and eggs until fluffy.
  3. Add molasses and milk.
  4. blend well.
  5. Mix in sifted dry ingredients.
  6. Chill for 2 hours in fridge.
  7. Drop by tbls.
  8. unto greased cookie sheet.
  9. Bake 10 minutes.
  10. Remove and cool on racks.
  11. Filling: Whip butter and sugar until fluffy.
  12. Slowly add milk/molasses and incorporate.
  13. Add spice and beat well.
  14. Use as filling between two cookies.

I thought these woopie pies were great! I had these in Maine this summer and was so happy to find the recipe here. I love the ginger cream filling. these will be great to make for the fall season. Thank you

I was excited to find this recipe, but very disappointed with the results. I made them tonight and they did not turn out well at all. I followed the recipe exactly - even sifted the dry ingredients. They turned out very flat and there was no way I could put the filling between the two cookies as they were so thin. The first pan ran all together and had to be thrown away. In the end, I salvaged a few that could be eaten as molasses cookies. The taste was okay, nothing great. I shall look for another molasses whoopie pie recipe. I would not recommend this one!
