Whoopie Pies are big sandwiched cookie. These are a hit with kids and adults alike. I prefer mine frozen!

  • Cookies: Beat pumpkin and butter with an electric mixer until smooth.
  • Add cake mix, eggs and milk and beat on low speed until combined, then on medium speed for one minute.
  • Cover cookie sheets with parchment or oiled foil.
  • Drop large mounds of dough 3 inches apart on cookie sheet.
  • Bake for 15 minutes at 375 degrees F.
  • Filling: Beat together butter and cream cheese until smooth.
  • Add powdered sugar, marshmallow cream, vanilla and cinnamon and nutmeg.
  • Beat until well combined.
  • Refrigerate at least 30 minutes or until cookies are ready to be filled.
  • When cookies are cool, spoon filling on bottom of cookies and sandwich together.

    Absolutely delicious! SO moist! My kids are not big cream cheese icing fans, so I lessened cream cheese amount and put more fluff. Then added only 2/3 of the sugar. Doubled it for a party. Very easy. Taste tested for myself and can't wait to serve 'em!

    Really good.... but they are sweet, so one is more than enough! The filling is delish and would make a great dip for apples or gingersnaps, too.

    I made these exactly as the recipe said and they turned out great! We're high altitude and had no issues. I made mine a bit smaller and thinner since I was taking them to a party. I did put the filling in the fridge before putting them together, but next time I'll give it some time to get a little softer before filling them as it was more of a struggle with the cold filling. These were delicious!
