  • Sautee onion in two tablespoons of chicken broth.
  • Add the rest of the chicken broth, leek, and beans. Bring to a boil.
  • Reduce heat and simmer until beans are done (about two hours).
  • Add evaporated milk to pan.
  • Remove 1 cup of bean soup and blend well, return to pot.
  • Stir in fat free cheese until melted.
