Crust
- 2⁄3 cup canola oil
- 1 cup brown sugar
- 1⁄2 cup corn syrup
- 4 cups oatmeal

Topping
- 1 cup chocolate chips
- 1⁄2 cup peanut butter
directions
- Mix oil, brown sugar, and corn syrup.
- Add oatmeal and mix together. Press into 13x9-inch pan.
- Bake at 375°F for 12-15 minutes. Watch carefully--should be soft and light brown, a little harder on the edges (it gets stiffer as it cools).
- After cooling crust: Melt chocolate chips and peanut butter. Mix together well.
- Spread on top of cooled crust. Cut into squares.

I think they are called Minnesota bars because of the oats which is a crop that is grown there. <br/><br/>I am giving it five stars for fool-proofiness. I used chunky peanut butter and we lived. I like peanut butter but my son thought that it was overwhelming. I think that next time I might add another half cup of chocolate to even it out a little more.

This was a great gluten and dairy free recipe. My husband thanks you a hundred times over. Finally he has a dessert/treat to bring to gatherings that everyone can enjoy. It was very easy to make. I microwaved the chocolate chips and the peanut butter in a bowl for a minute and it stirred right together. I store mine in the refrigerator to keep the chocolate firm.
