Mini Meatloaves

"I found this recipe after searching google for yet ANOTHER version of meatloaf (one of those things that just NEEDS constant tweaking), and tweaked to my own liking. My family is VERY picky and we found these mini's tasty, and filling, I personally like this recipie as its easily doubled to make and freeze future mini's. I used disposable mini loaf pans and that was a HUGE time saver once clean up came along. The jam helped keep the meat nice & moist WITHOUT being overly sweet."

  • 1 14 lbs ground beef
  • 1 egg (lightly beaten)
  • 1 cup plain breadcrumbs
  • 14 cup half-and-half (can use low fat, i did)
  • 12 large onion, chopped (more or less to taste)
  • 1 stalk celery, chopped
  • 2 garlic cloves, minced
  • salt & pepper (more or less to taste)
  • 1 (12 ounce) jar apricot jam

  • Combine ground beef, bread crumbs, half-and-half, onion, celery, garlic, salt, pepper Mix well.
  • Spray mini-loaf pans with no-stick cooking spray. Divide meat mixture into pans equally.
  • Bake meatloaves at 350 for 5 minutes.
  • Mix together apricot jam & enough water to make a nice consistency glaze. Glaze the meatloaves with this mixture and cover each with foil. Bake 20 minutes.
  • Remove foil and reglaze with remaining mixture and bake another 15 minutes.
  • I served this with cheddar mashed taters & tossed salad.
