Mini Meat Loaves in the Microwave

  • Crumble meat in a large bowl. Add chopped onion.
  • Beat egg slightly, then add bread crumbs, milk and parmesan cheese. Mix all together with beef.
  • Add remaining ingredients, except for the ketchup, and mix again.
  • Shape meat into 6 evenly sized balls, place in circle in microwave safe bowl. Top with ketchup.
  • Cook in microwave on HIGH for 7 minutes. Lat stand 5 minutes before serving.

  1. I am not sure if I will ever be able to give an accurate rating with stars for this recipe. The first time I made it, I didn't have enough parmesan so I added some shredded Mexican blend cheese. I didn't like the amount of breadcrumbs (far too much) or the ketchup on top, which I thought was too sharp. The cooking time was perfect. I loved the method, so I tried again. This time I eliminated the breadcrumbs entirely and used the correct amount of parmesan. I also changed the glaze to 1/2 ketchup and 1/2 barbecue sauce. I made it into 5 servings instead of 6. I thought the flavor and texture were much better. I got a complaint about the barbecue sauce so I might be back to the drawing board on the glaze. I also thought there was too much, so I would half the total amount (to 1/2 c.). Since I love this cooking method so much, I might experiment with transferring it to other meatloaf recipes with different flavors.
     
  2. My husband made this for the boys tonight and they all enjoyed it! Hubby said they were easy and that he cooked them for 10 minutes. He didn't use any salt but added a bit of tabasco. They didn't save me any! Made for PAC Fall 2009
     
  3. I made these as an easy meal for my teens on an evening DH and I were going out. Then I tasted it myself the next day as a cold sandwhich. It was every bit as fast to put together as advertized. Its a good alternative to nuking something store bought, though it lacked the browned flavor of an oven meat loaf. I used oatmeal instead of breadcrumbs because I always do. Just a note -- in my microwave 7 minutes was inadequate. I did the second batch for 5 minutes, then turned it, and gave it 5 more minutes. Less than half an hour's work put good, homemade food on the table so its definately worth filing for those busy days. I could see freezing these individually for family members to make for themselves on those days when no one is on the same schedule.
     
  4. My family love these. They are like large meat balls. I omitted the breadcrumbs and milk. You don’t even need an egg. I tried these with spinach in them too, and the kids still loved them. I needed to turn the balls after the recommended 7 minutes and give them another 2 minutes to cook them completely. These are a family favourite. Thanks
