A side dish for almost all Mexican meals!
- 1 cup basmati rice
- 1 tablespoon olive oil
- 2 cups chicken broth
- 1 cup salsa, preferably fresh
- 1 teaspoon cumin powder
- 1⁄2 cup red bell pepper, diced
- 1 teaspoon chopped garlic
- 1 teaspoon salt
- 1 teaspoon pepper
- • Saute the rice in the olive oil over high heat until the rice becomes opaque or white. Add the rest of the ingredients and bring to a boil. Turn heat to low and cook covered for 25 minutes. SERVES.
OH WOW!!! This was soo good. Used Habernero salsa and also the cayenne. My DH couldn't quit eating this. Will definitely be making this again.Thank You so much for a very tasty recipe!!
