Mexican Chicken and Rice (One Pot)

directions

  • 1) put flour, salt, pepper, paprika in a zip-top bag, add cubed chicken pieces. Shake until chicken is well coated in flour mixture.
  • 2) add olive oil to pre-heated skillet, add chicken. Sauté chicken until brown.
  • 3) add bell pepper and garlic to pan with chicken, sauté 2-3 minutes.
  • 4) add rice, tomatoes and next 4 ingredients to pan.
  • 5) add first 1/2 cup chicken stock to pan, cover and let cook, stirring occasionally, adding more chicken stock if needed to get rice to desired consistency.
  • 6) enjoy!

I've been a member of this website for a while, but due to computer issues, had to register again. hopefully, recipes will be posted soon, but for now... I recently got married in September of 2007 to the most wonderful man in the world. We are about to be home owners, and can hardly wait! i enjoy spending time in the kitchen with my husband, we love to cook together. i work in an eye doctor's office as a technician, and love what i do! life right now is pretty great, being "newlyweds" is fun!
