- 29.58 ml butter
- 1 garlic clove, minced
- 118.29 ml red onion, diced
- 118.29 ml red bell pepper, diced
- 4.92 ml cumin
- 2.46 ml garlic powder
- 2.46 ml Mexican oregano
- 2.46 ml black pepper
- 473.18 ml cooked black beans or 473.18 ml canned black beans
- 118.29 ml chicken broth (may use more or less)
- 1 lime, juice of
- salt, to taste
directions
- Saute garlic, onions and bell pepper in butter until soft.
- Add spices and saute until fragrant, about 1 minute
- Add black beans and broth. Bring mixture to boil, then reduce heat and simmer covered for 10 minutes.
- Season with lime juice and salt to taste upon serving.
