Maryland Crab Cakes

"If you have ever been to the Maryland area or once lived there you would know how AWESOME the seafood is! This recipe will not disappoint you! It was handed down to me from my Mommom, who has lived in Delaware ( Maryland's Neighbor) her entire life. Please try it and I hope you enjoy it as much as I have over the years!"

  • Mix together eggs, mayo, OLD BAY, pepper, worcestershire sauce, and mustard, until creamy.
  • Add bread crumbs, mixing evenly.
  • Add in the crab meat, being sure to mix evenly.
  • Shape into cakes.
  • Makes 6 large or 9 medium crabcakes.
  • Saute in pan with a little oil for about 5 minutes on each side.
  • You can also broil them until brown. This may require you to flip them, depending on your pan.
  • Serve with tartar sauce and lemon.
  • Tip: Try a crabcake sandwich. I use a Martin's Brand potato roll topped with tartar sauce and crisp lettuce.

  2. Really great! I baked mine for 20 minutes at 425F on a greased cookie sheet instead of pan frying to cut down on the fat and they turned out perfect.
     
  3. Made this but followed my Mom's recommendation, instead of saute I bake them in the oven for 10 minutes, then broil for another 5 minutes. They are really good, not greasy and make good appetizer. Thanks for sharing your recipe.
     
  4. I worked for the Lobster Hpuse in Cape May. N.J.a lifetime ago. I made the crab cakes.amd your recipe comes sooooooo close. I added parsley, a little garlic and onion powder. and diced some green pepper. I also diced about three slices of soft bread (crust removed) to give the cakes a lighter texture. So Good! Thanks Leslie, I almost forgot just how good crab cakes were.
     
  5. This one is a bit more involved than the one I learned. This Virginia kid learned that the crab cake is best when simple. We'd pick up crabs and crab meat at the dockside boats in Washington, DC. So very fresh. The crab cake is Lump Crab meat, just enough unsalted soda cracker crumbs to help bind with the egg. Old Bay (original) to taste. Fry in a little oil or oil/butter mixed until golden on each side - about 4 minutes. Serve with a bit of Old Bay in Mayo for a sandwich. For either bite size or plated for dinner offer the Mayo mix and cocktail sauce. If you really want tartar sauce do it home made and with dill relish.

Tweaks

  1. Lemon zest enhances any crabcake.
     
  2. Added a little bit of finely chopped bell pepper to it.
     
  3. I used (3) cans of lump crab meat instead of fresh crab meat and the cakes still turned out great! My family really enjoyed this and it was very easy to make. They have already requested it again!
     
  4. This is a great base recipe for adding this and that to your own preferences. I actually realized that I was out of worcestershire sauce after mixing everything, and used A-1 steak sauce instead. Turned out great. I also doubled the Old Bay, used club crackers instead of bread crumbs, and baked in the oven. Will definitely make again.
     
  5. Darn good crabcakes, just like my Gammy used to make, with a few minor changes. I double the Old Bay, reduce the Worcestershire by 1/2T, used saltine cracker crumbs instead of bread crumbs. Then I fried them in pure BUTTER (because thats what Gammy did!). When you're eating comfort food, why go healthy?
