Maria's Pickled Shrimp

- 2 lbs boiled shrimp (seasoned with Zataran's Shrimp Boil, or the like)
- 2 ounces pickling spices (1/2 jar?)
- 1 large sweet onion (cut in thin strips)
- 4 stalks celery (cut into 3/8-inch chunks)
- 1⁄4 cup sugar
- 1⁄2 cup olive oil
- 1 tablespoon white pepper
- 2 teaspoons cracked black pepper
- 2 cups apple cider vinegar
directions
- Boil shrimp until just cooked and still tender. Cool to room temperature.
- Meanwhile, bring to a boil vinegar, sugar, 1/4 cup water and spices. Simmer and reduce to 3/4. Cool to room temperature.
- Make an emulsion of the vinegar solution and the olive oil.
- Add vegetables and shrimp and marinate refrigerated overnight.
- Will keep for at least one week.

'Looking at possibilities in upscale catering and/or a B&B situation in the Northeast. Now -- If I could just get Seattle to move somewhere between DC and Baltimore, and still have the mountains and the water, life would be perfect...lol.
