- 2 1⁄2 cups flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1⁄2 teaspoon salt
- 3⁄4 teaspoon ginger
- 1⁄2 cup butter, softened
- 1⁄2 cup light brown sugar, packed
- 2 large eggs
- 1 1⁄4 cups maple syrup
- 2 teaspoons vanilla extract
- 1⁄2 cup buttermilk
- 1⁄2 cup finely chopped walnuts

MAPLE FROSTING
- 1 cup butter, softened
- 3 ounces cream cheese, softened
- 2⁄3 cup dark brown sugar, packed
- 1⁄4 teaspoon salt
- 3⁄4 cup maple syrup
- 3⁄4 teaspoon vanilla extract
- 1 cup powdered sugar
directions
- sift cupcake dry ingredients and set aside --
- preheat oven to 350* --
- beat butter and sugar together using a mixer, -- set on medium speed in a large bowl till fluffy --
- beat in eggs, syrup and vanilla --
- stir in flour mixture by thirds -- alternate with buttermilk.
- stir in nuts -- drop in paper cupcake lined muffin tins --
- bake almost 20 minutes -- .

I love cooking, and reading Christian fiction..I have 5 grandchildren..4 boys and 1 spoiled granddaughter...I also have a black cocker spaniel named Tobey..who is very spoiled..Love computer games, cross stitch and reading cookbooks..I was diagnosed with Acute Myeloid Leukemia almost a year ago, on September 26, 2005....was in an out of the hospital for 8 months, doing intensive chemo...I am doing well now, thanks for all the prayers...
