Maple Apple Crunch

- 4 apples, unpeeled and thinly sliced (Granny Smith or MacIntosh 1 1/2 lbs)
- 2 tablespoons fresh lemon juice
- 1 teaspoon ground cinnamon
- 1⁄2 cup raisins
- 1⁄4 cup maple syrup

Topping
- 1 cup regular rolled oats, uncooked
- 1⁄3 cup flour
- 1⁄2 cup sliced almonds
- 2 tablespoons canola oil
- 2 tablespoons maple syrup
- 1 teaspoon almond extract or 1 teaspoon vanilla extract
directions
- Preheat oven to 350°F
- In a bowl, combine apple slices, lemon juice, cinnamon, raisins and syrup.
- In another bowl, combine oats, flour, almonds, oil, syrup and extract.
- Spray a 9x13-inch baking dish with canola oil cooking spray and add apple mixture.
- Cover pan with foil and bake 30-40 minutes, until apples are softened.
- Sprinkle with topping.
- Bake uncovered another 20-30 minutes until crisp. Serve warm.

<p>I was born and raised in Connecticut. I love the New England area, I think it is so pretty with the change of the seasons. <br /><br />I work for an ambulance company in their wheelchair division for non-emergency transportation. I work in the billing and customer service office. I love my job, the duties are so varied that you are always working on something different....no time for boredom. <br /><br />I am a mother to four, two sons and two daughters. <br />All have left the roost to start there own family. At last count, I was a granny to 6 boys and 2 little girls. <br /><br />I love Recipezaar and all the new daily postings. I see so much I want to try and continue to save them. I just don't have all the time to make all these recipes. I lost my husband in July 2006 and I am not the spring chicken anymore...pretty tired when I get home from work...so it's all quick, quick, quick, for me. <br /><br />I have tried a few....and have been pleased with my results and the new taste sensations. I am trying to initiate a goal of trying at least two new recipes a week.
