Manhattan Clam Chowder

"Took a recipe from Highland Park Market and made a few changes. I may try adding some carrots the next time. This is 1pt for Weight Watchers."

  • Saute peppers and onion in olive oil.
  • Add onions and continue to cook.
  • Once the vegetables start cooking, add garlic.
  • Now add the thyme, basil and cayenne; then tomatoes and their juice.
  • Cook about 10 minutes.
  • Pour in the clam juice from the cans of clams and the tomato juice.
  • Cook until vegetables are just cooked.
  • Add chopped clams and pepper, if desired.
  • Cover and simmer 10 minutes so that all the flavors meld.

My name is Kathy and I live in Chicopee,MA which is how I came up with such an original name to use on the site,lol. I'm a single mom and have a daughter,22,who is now back living with me. I love to cook and bake but have had to cut back somewhat because I have Multiple Sclerosis. I have a friend who sent this site to me and I attacked it looking for crockpot recipes....easy to fix supper this way,lol. Then I looked around the community and fell in love with you guys...thx.
