Mamaw's Spanish Rice

"I grew up on the Texas/Mexico border so my mother learned how to make excellent Mexican dishes. This is her Spanish rice recipe and it is so yummy. I can eat this alone as a meal!"

  • Brown rice in oil on medium heat.
  • Add onion and saute'.
  • When rice is brown add canned tomatoes, salt, pepper, cumin, and water.
  • Stir and bring to a boil.
  • Cover and reduce heat to a simmer.
  • Cook on low heat for 15 minutes or until rice is done.

  1. How easy this was to make! I did not like the "processed" taste of spanish rice mixes; this tasted fresh and delicious. It was seasoned perfect for my 8-year old, however, I think one could easily add a little cayenne pepper to give it a little kick. Thanks, Stellacaster, for posting. Sue
