Low Fat Rice Krispie Meat Loaf

"Low in fat because you use a mixture of ground turkey, lean ground beef, rice krispies and egg substitute. A dear friend gave me this recipe and it is delicious. You could of coarse use real egg."

  • Preheat oven to 400°F.
  • Mix all ingredients together in a large bowl, then place in a loaf pan.
  • Spread ketchup over top.
  • Bake for 60-75 minutes (or until internal temperature is 160°F) in a standard oven or 55 minutes in a convection oven.

  1. Great recipe which we enjoyed with baked potatoes and steamed veggies. The changes I made was using ground pork and ground buffalo -- delish! I also liked that you had convection oven directions -- which I used the full 55 minutes and it came out perfect! Thanks again for sharing this keeper!
     
  2. This was the perfect recipe for me, because I have a box of Rice Krispies that is just taking forever to finish!! I turned it vegetarian by using TVP instead of beef / turkey, and it worked out quite well. Maybe a tad salty, but that would probably be because I used kosher salt and overdid it. I used Walden Farms "calorie free" ketchup, too, which I think just has a salty flavor. I made this in two eight-inch pans; one with ketchup, and one without. Thanks for posting!!
