Low Fat Greek Hummus

- 1 (15 ounce) can chickpeas (save liquid) or (15 ounce) can garbanzo beans, drained (save liquid)
- 1 -2 garlic clove, crushed
- 1 tablespoon lemon juice
- 1 tablespoon tahini (optional, but if you do not use, increase yogurt by 1 TBLS) or 1 tablespoon low-fat peanut butter, if you prefer (optional, but if you do not use, increase yogurt by 1 TBLS)
- 1⁄2 cup plain yogurt
- 3⁄4 teaspoon salt
- 1⁄2 teaspoon cumin
- 1 pinch cayenne
directions
- In a food processor combine beans, tahini (if desired), yogurt, garlic, and lemon juice. Blend well. Add salt, cumin and cayenne and blend to a smooth and creamy dip.
- If you hummus is too thick, add a little bit of the liquid from the chickpeas - about a teaspoon at time. Other ways to thin out hummus is by using warm water or olive oil also.

When I first discovered hummus, I went overboard and ate a lot thinking it was healthy (it is) and low fat (it is not). I crossed my fingers and hoped there was a lower fat option and found this recipe and it is AMAZING! You would never know it's a lower fat option, never!! Definitely some of the best I've ever had and it's stuff I had at home already. I used plain greek yogurt and the peanut butter option. I don't think I'll ever buy any again, this is heavenly.

This was the best hummus recipe I've ever made. It's very creamy and has a milder taste than other hummus recipes that I've tried. I made half the amount 'cause I was finishing up some chickpeas and I only had enough for 1/2 the recipe. I will definitely make the full amount next time. This was excellent!

I am a native Californian, born in the Los
Angeles area, college in far northern California and now living in southern part of the San Francisco Bay Area.
I love kids and animals. I am an active volunteer at my two teenage daughters' high school as well as a Girl Scout leader. We have two guinea pigs, one Dalmatian, one cockatiel, and one quarter-horse to keep us busy. I had a career as a marketing writer before I became a full-time mom and volunteer, but I still write all the time as well as participate in a monthly book club.
I stay active and have Jazzercized for over 25 years on a regular basis. I also am trying to do some yoga now and ride horses for fun.
I have loved getting involved in the RecipeZaar games and learning how to post the photos. I am currently playing on the Zaar World Tour and it is lots of fun!
Have been a sports fan since childhood and definitely have enjoyed getting to know about hockey since we have a very successful NHL franchise in our area: Go Sharks!
