A co-worker's Norwegian Grandmother's recipe. A traditional Norwegian hash.

Directions

  1. Boil potatoes, carrots and onion in water- until the potatoes split.
  2. Pour off about 2/3 of the liquid into a bowl (if needed for later).
  3. Add corned beef to pot.
  4. With mixer, mix everything to the consistency of mashed potatoes.
  5. (if too dry.. add more liquid) Season with salt and pepper.
  6. (I also like ketchup).

I haven't had Lapskaus in over 45 years, and today I made your recipe. My mother made this often but never shared her recipe. This is it! Thank you so much for sharing this recipe with us.

We love it-you might want to put the proper spelling...it's "Lapskaus"...only for search purposes. I am of Norwegian decent and my grandmas made this all the time..YUM!!

My Grandmother used to make this and added thyme and 1/2 stick of butter before mashing. We serve it with lettuce, it really is good and leftovers are great the next day to fry up and have with eggs.
