Lemon Pillow Cake

Marie's Note:

A make easy white cake from a mix with pockets of lemon filling. Have not tried this yet, but I hope someone beats me to it because it sounds great! Cook time and servings are estimated; check box for actuals.

Ingredients:

Servings: 12

For Cake

• 1 white cake mix
• 2 eggs (or per cake mix directions)
• 1⁄3; cup oil (or per cake mix directions)
• 1 cup water (or per cake mix directions)
• 1 (21 ounce) can lemon flavor pudding and pie filling

For Frosting

• 1 (16 ounce) container ready to spread lemon frosting
• 1 (8 ounce) container Cool Whip

Directions:

1. Mix cake as directed on box and pour into a greased and floured 13 x 9 pan.
2. Place spoonfuls of lemon pie filling in blobs over batter.
3. Bake as directed on box.
4. Cake batter covers blobs to create pockets of lemon filling inside.
5. Let cool completely.
6. Mix together frosting and cool whip and spread on cake.
7. Keep refrigerated.

My Husband and I LOVED this recipe !!! It was so easy to make and turned out beautifully. I used lemon cake mix instead of white for an even lemonier flavor. It is delicious ! Thank you for such a great recipe !!

Wow this is a 10 star cake. It turned out great! Ate it just as it cooled. Anxious to try once it is cold. Creamy, gooey and just a nice light flavor of lemon. I will definately make this again probably many times. Thank you for such a wonderful dessert.

I followed the directions, except when it came to the pudding. As another reviewer suggested, I put the pudding in a plastic bag and piped it on top of the batter in the pan. I also did not use the entire amount. The cake came out perfectly. It was moist and delicious.
