Lemon Bar Frosting

"Goes with the Lemon Bar Cupcakes"

• Yields: 2 1/2 cups
• Serves: 20

ingredients

• 3⁄4 cup unsalted butter, softened to room temperature
• 1 teaspoon vanilla extract
• 3 -4 cups powdered sugar
• yellow sanding sugar, for garnish
• 1⁄3 cup lemon pie filling

directions

1. In bowl of stand mixer cream together butter, vanilla and lemon pie filling until fluffy, about 2 minutes.
2. Add in the powdered sugar, one cup at a time, until frosting is light and fluffy. You might not need all the powdered sugar.
3. I figured the 20 servings at 2 TB a serving.
