From my old family cookbook, my father's favorite dessert. Sometimes I substitute 1/2 Splenda 1/2 sugar for less calories. Makes a nice dense cake and the topping is great. Feel free to add more coconut to the recipe, I do!

  1. Beat eggs, add sugar gradually, add vanilla.
  2. Sift flour, baking powder and salt, add to sugar and egg mixture.
  3. Heat milk and shortening to boiling point (I do this in the microwave) pour over other mixture and mix well.
  4. Bake in 9 inch pan at 350F for 20 minutes. Remove from oven and white still hot add the coconut mixture on top and return to oven to brown (5-10 minutes).
