- 1 cup concord grapes, pulped, skinned, and seeded
- 4 eggs, separated
- 2 tablespoons flour
- 1 cup sugar
- 2 tablespoons water
- 1⁄2 teaspoon vanilla extract
- 1 unbaked 9-inch pie crust
- 4 tablespoons sugar for meringues
directions
- Place the 4 egg yolks, flour, sugar, and butter in a large mixing bowl and beat until creamy. Add the grape pulp and skins and water and mix in thoroughly. Blend in the vanilla. Pour this mixture into the unbaked pie crust and bake in a preheated 350 F oven for about 20 minutes. Meanwhile beat the whites of the eggs until fluffy, adding 4 Tbs sugar and beating until soft peaks form. Spread over pie and continue to bake until meringue is brownish. Remove from over and let cool thoroughly before serving.
