Laura Garlick's Concord Grape Pie

"Laura Garlick was my piano teacher many years ago in Oxford, NC. She was originally from Gates County, NC, but I do not know whether she brought this recipe to Oxford or developed it thereafter. However I am aware that this was far and away her favorite pie."

  • Place the 4 egg yolks, flour, sugar, and butter in a large mixing bowl and beat until creamy. Add the grape pulp and skins and water and mix in thoroughly. Blend in the vanilla. Pour this mixture into the unbaked pie crust and bake in a preheated 350 F oven for about 20 minutes. Meanwhile beat the whites of the eggs until fluffy, adding 4 Tbs sugar and beating until soft peaks form. Spread over pie and continue to bake until meringue is brownish. Remove from over and let cool thoroughly before serving.
