  • In a large bowl, combine flour, pudding mix, cinnamon, baking powder, baking soda and salt.
  • In another bowl, combine eggs, buttermilk, oil, honey and vanilla - then add to dry ingredients.
  • Whisk for 1-2 minutes or until combined.
  • Fold in chocolate chips.
  • Fill greased or lined muffin cups 2/3rds full.
  • Bake at 350 degrees for 20-25 minutes or until toothpick comes out clean.
  • Cool for 5 minutes before removing from pans to wire rack.

  1. Good. I used only 2 eggs and added a scoop of sour cream. I also used part whole wheat flour, and subbed sugar for the honey. Next time I would add more than 2 tsp cinnamon.
     
  2. Chocolate chips and cinnamon.....what a GREAT combination!!!!! Who would have thought?!?? I took them to our church meeting and everyone loved them and asked for the recipe.   3. Tasty combination, not too sweet, this made 22 petite muffins. They were a bit burnt on the bottom, which I attributed to the first toothpick coming out with melted chocolate, so the extra 5 minutes may have been too much; I recommend pressing down with a finger to see if the muffin's surface bounces back. I tried chopping regular semi-sweet chips in my food processor with mixed success, and the larger chips did not suspend well in the muffin batter. I really like this taste combination, so I plan to remake with mini chips and with the finger-bounce-back test. Thanks for posting, HokiesLady! Made for 1-2-3-4 Hit Wonders tag.

  5. Yummy! Yummy! Yummy! What more can I say. Made 18 muffins with no changes in recipe. Although next time I might throw in some nuts. Thanks for posting.
