Kathy's Carrot Cake

"A long time ago I was a long distance operator and I worked with a girl named Kathy. She was the best baker and her carrot cake is delicious. Moist and flavorful. I have had this recipe for 30 years try it I think you'll like it."

ingredients

• 2 cups flour
• 2 teaspoons baking powder
• 1 1⁄2 teaspoons baking soda
• 1 teaspoon salt
• 2 teaspoons cinnamon
• 2 cups white sugar
• 1 1⁄2 cups oil
• 4 eggs
• 2 cups grated carrots
• 8 1⁄2 ounces crushed pineapple (drained)
• 1⁄2 cup nuts, cut fine

directions

1. sift flour, baking powder, soda, salt and cinnamon together. Add sugar, oil, and eggs. Mix well. Add carrots, drained pineapple and nuts. Pour into three 8 or 9 inch cake pans, greased and floured. Bake at 350 for 40 minutes.
