Katherine's Spanish Rice

"This is just an awesome Spanish rice dish that I always prepare with my recipe for Mexican Corn Bread (#110947). I also make Mexican Fried Corn (#58803)which is really tasty and goes well with my Spanish Rice and Mexican Corn Bread. If you are in the mood for Mexican some evening, make all three dishes and you won't be disappointed, neither will your guests!"

  • oil
  • 1 large red onion, chopped (or yellow onion)
  • 14 - 12 cup chopped green pepper, red pepper and yellow pepper (Note ( if you do not have peppers on hand, you can use Salsa. If you like it hot, use a hot Salsa an)
  • 1 cup rice
  • 2 cups hot water
  • 1 tablespoon chicken instant Oxo
  • 2 teaspoons tomato paste
  • 1 small tomatoes, chopped
  • 12 teaspoon basil (use more depending on your taste)
  • 12 teaspoon oregano (use more depending on your taste)
  • 1 tablespoon minced garlic

directions

  • Heat the oil in a medium frying pan(use enough oil to cover the bottom of the pan) on medium heat.
  • Slowly cook the chopped onions until soft.
  • Add the rice and coat it with the oil and onions.
  • Mix the chicken OXO in 2 cups of hot water and slowly add to the rice.
  • Add tomatoe paste, basil, oregano, minced garlic and chopped tomatoes.
  • Reduce the heat to simmer and reduce the liquid by half.
  • Add the chopped green, red and yellow peppers (or Salsa).
  • Cover with lid and simmer for 20-25 minutes.
  • Once cooked the rice should be a bit wet.
  • Enjoy!
  • Note: Watch to see if more hot water is needed during cooking.

Hi my name is Katherine and I live in Leduc, Alberta, Canada which is 15 minutes south of Edmonton and home to the world famous West Edmonton Mall. I work for the Royal Canadian Mounted Police (R.C.M.P.), which is a extremely interesting job. My family consists of my husband Brian and we had a blue eyed Siberian Husky named Yukon who loved her 2 to 3 walks a day. Yukon passed away on July 24/07 at the age of 14 years & 7 months. We have a beautiful male Tuxedo cat named Kuffs, whom we rescued in December, 2006. He around 6 weeks old & was dumped off at my husband's business in -30 Celcius weather & was half froze when Brian found him. Kuffs brought back life into Yukon for the nine months that he was with her. Those two certainly loved to cuddle & chase one another. After Yukon's passing, Kuffs quit eating, looked for Yukon & cried constantly. We had full intentions of getting him a playmate but it happened sooner than later. That same week we went to the Humane Society (SPCA)& adopted a gorgeous little female pure grey kitten & named her Jesse. She is just precious & became Kuffs baby sister. I love to try different recipes and Recipezaar has provided me with some of the most tasty and wonderful recipes yet. Things I enjoy doing are walking,reading a good novel, sewing, crafts, traveling, camping and being with good friends and family.
