  1. This is not Jim n Nicks. Firstly, it is not hot, and secondly, not vinegar”y”. It has lots of black pepper which to me, makes the sauce. What they sell in bottles is not what they whip up in the restaurant. And the best sauce is made at their 5 points location. Love Jim n Nicks!!!!
     
  2. As an Alabamian who also LOVES Jim N' Nick's, this is not even close to their recipe. My husband and I like their food so much we actually had them cater our wedding; believe me, we know their sauces. Mayo-to-liquids wise, the consistency of this recipe is fine. But the spices? Not even close. 3 tablespoons of pepper AND 3 tablespoons of cayenne?! Alabama white BBQ sauce is NOT hot, so I don't know what is meant by "hot, how we like it in Bama." Hopefully this is an unfortunate typo and the author meant teaspoon? I made this recipe exactly as listed above but with one Tablespoon of cayenne and even then I was wary. Turned out it was hot as blazes. Personally I like spicy, so I liked the sauce. But representing this recipe as a "Jim n Nick's" copy cat is sacrilege. If you want something closer, add just a dash of cayenne and one Tablespoon of pepper at the very most.
     
  3. I'm not sure what Typhoon Jackson is talking about here. While I have seen other recipes for Alabama White Sauce that use the ratios he mentions, this one looks pretty reasonable. It's basically a 3:1 ratio, much like a salad dressing. I think this recipe makes more sense, if you ever had the actual "Morgan County" sauce served at Jim 'n Nick's BBQ.
     
  4. Did Jim and Nicks offer this up on April Fool's Day? So 2 1/2 cups of mayo to 2 tablespoons of liquid...never heard of a bbq sauce that had to be spread with a knife, maybe just me. Yes I'm being harsh, but this is the top return on google search so trying to help those looking for the real deal. I'd suggest changing the vinegar to 1/2 cup then adding apple juice and/or water until it's the consistency you want. Personally, I also reduced the amount of cayenne by half (think bbq sauce, not hot sauce) and added some onion powder. Probably still needs some fine tuning, but that should be much closer.
