Jamaican Potatoes Pimento Cheese

• roux

• 29.58 ml butter
• 29.58 ml flour
• 4.92 ml salt
• 4.92 ml pepper
• 473.18 ml milk
• 226.79 g cheese, shredded

• casserole

• 4 potatoes, peeled, diced
• 1 onion, diced
• 396.89 g pimientos, jar can use less

directions

1. heat butter and flour and seasoning.
2. add milk.
3. stir until thickened.
4. add cheese.
5. stir.
6. in buttered casserole.
7. mix potatoes onions and pimento.
8. stir in sauce.
9. cover.
10. bake 40 minutes at 425 degrees.
11. uncover.
12. bake 10 minutes until done.

I was intrigued with this recipe as I don't think I've ever had pimientos in potatoes before. I made 1/2 the recipe with a mixed cheese blend. I baked these in a small round souffle type dish. The recipe does not say what temperature to cook these, so I baked them at 350F for the times given. My potatoes weren't even close to being done in this time frame, so I think that the temp either needs to be higher, or that they need more time in a dish that isn't as deep. I cooked them for close to an hour. We both loved these creamy potatoes with our meal. Thanks Dee for sharing. Made for ZWT9.
