  • Put ingredients through olive oil in large skillet.
  • Cover & simmer for 10 minutes.
  • Then add salt through capers.
  • Mix well & simmer covered 25 minutes or until eggplant is cooked, not mushy.
  • Chill overnight & serve at room temperature.
