  • Preheat oven to 350°F
  • Place the chicken thighs, red onion, garlic and carrots into a deep baking tray and lightly coat with olive oil.
  • Sprinkle with 2 of the stock cubes and the thyme.
  • Place into the oven and roast for 40 minutes.
  • Meanwhile make the sauce: Cook the pancetta or bacon in a pan until it starts to crisp, carefully add the wine (if using) and cook for a few minutes, then add the tomatoes, paste and the last stock cube.
  • Cook for 10 minutes on a medium heat, until it has cooked down into a thick sauce.
  • Remove the chicken from the oven and (very carefully) drain off some of the fat. Take the chicken thighs and the thyme sprigs out of the pan and pour the sauce over the onion, garlic and carrots.
  • Mix well; put the chicken back on top of the sauce skin side up and return to the oven for 15 minutes. Serve immediately.

  1. This recipe was very simple to prepare, and flavorful! I did sprinkle salt and freshly ground pepper on the chicken/vegetables before drizzling with olive oil, and substituted a sprinkling of dry thyme for the sprigs of fresh since I prepared this before my plant emerged from the snow bank. We served it over freshly made fettucini with a side of broccoli; delicious!
