When cooking my first Thanksgiving meal, I realized at the last minute that I had forgotten the stuffing. I threw together what I had, and my family said it tasted great. It is basic, but good and quick.
- 1 cup chopped onion
- 1⁄4 cup butter
- 4 cups cubed cornbread
- 1⁄2 cup chicken broth
- 1 teaspoon poultry seasoning
- Saute onion in butter till tender.
- Combine with remaining ingredients.
- Place in lightly greased baking dish.
- Bake 25 minutes in a 350 degree oven.
I gave this recipe 3 stars. I got mixed reviews on this recipe. My future hubby and 6 yr old newphew didn't care for this recipe. I on the other hand really liked it. I was looking for a recipe that was simple and that I had everything on hand and this was it. I had some corn muffins on hand that need to be used up. I will make it again for myself. Thanks for posting a good recipe. Christine (internetnut)
