- 6 corn tortillas
- 1 (15 ounce) can black beans, drained and rinsed
- 1 tablespoon olive oil
- 6 large eggs
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon pepper
- 3⁄4 cup refrigerated fresh salsa
- 6 tablespoons light sour cream
- 1 ripe avocado, sliced
directions
- Heat tortillas and beans according to package directions.
- Heat oil over medium high heat in large skillet; crack three eggs into skillet.
- Cook 2-3 minutes or until desired doneness; repeat with remaining eggs.
- Sprinkle eggs with salt and pepper.
- Place one egg on each tortilla; top with beans, salsa, sour cream and avocado.
