Hot Chocolate Puddings

"This is perfect comfort food. Fluffy cake-like puddings on the outside and ooey, gooey chocolate on the inside. Could you ask for anything else? Make sure you use the best chocolate you can find and afford (upwards of 70 percent cocoa solids is best)."

  • Pre-heat the oven to 200 C.
  • Lightly butter four ramekin dishes or oven-proof tea cups.
  • Roughly break the chocolate into pieces and leave to gently melt in a double boiler or in a microwave.
  • Meanwhile, put the sugar into the bowl of a mixer.
  • Separate the eggs and add the yolks to the sugar, beating until thick and creamy.
  • Separately, whisk the egg whites until they are almost stiff.
  • Stir the butter into the melted chocolate and leave to melt, then add the chocolate spread.
  • Fold the chocolate into the egg and sugar, then carefully fold in the beaten egg whites.
  • Be gentle and don't overmix, just fold in until there are no more egg whites sticking out of the mixture.
  • Scoop into the dishes and place on a baking sheet.
  • Bake for 12-25 minutes, until risen.
  • The tops will be cracked and the centres should still be slightly wobbly, from all the melted chocolate inside!

  1. Utterly decadently wonderful! The recipe works perfectly and the result is divine: the only reason I've not given it 5 stars is because you can't taste the Nutella at all. Next time I make it (and I *will* be making it again!), I'll try with slightly less chocolate and slightly more chocolate spread.
     
  2. Truly wonderful comfort food, and a very easy recipe! I was able to do it inbetween getting the main course ready, and the results were very much appreciated by adults and kids alike. The only suggestion I would make is to reverse steps 5 and 6, as then you can avoid having to rinse your beaters inbetween the two steps. Fantastic for chocolate lovers and anyone who needs a bit of a lift!

This is a picture of me and my husband in Portugal, climbing up above the clouds with our bikes. Right now we are travelling around the world on our bicycles, so I only pop onto Zaar occasionally, when internet connections and time allow me to. Our trip may take several years so if it's urgent, it's probably better for you to post in the forums ;) Good food is really important to me -- I am happy to pay extra for food that I feel is produced in a sustainable and ethical way and always try to eat using seasonal produce. When we were in the UK we rarely shopped at supermarkets, trying instead to favour small producers, although we were very lucky in that we lived in London and there was lots of choice. We also were fortunate enough to have a weekly organic veg box delivered to our door, filled with so many lovely vegetables for very little money. It really opened my horizons in terms of the variety of vegetables I eat. If you're in the UK, check out Riverford for a box supplier as they're amazing!
