Hillbilly's Chocolate Applesauce Cake

- 177.44 ml butter or 177.44 ml margarine, melted
- 354.88-473.18 ml sugar (I used 1.5C, and it's not super sweet. I think 2C would very good)
- 2 medium eggs or 2 large eggs
- 4.92 ml vanilla extract
- 118.29 118.29 ml yogurt (I reconsitituted dried buttermilk) or 118.29 ml sour milk (I reconsitituted dried buttermilk)
- 354.88 ml applesauce
- 2.46 ml salt
- 9.85 ml baking soda
- 78.78 ml unsweetened cocoa
- 591.47 ml flour
directions
- Preheat oven to 350 degrees and oil a 9x13 baking dish.
- With a mixer or whisk, combine sugar and melted butter.
- Add eggs and vanilla extract. Beat well until creamy.
- Beat in applesauce and buttermilk/yogurt/sour milk.
- Add salt, baking soda, cocoa, and flour. I sifted all of the dried ingredients onto parchment paper, then added it slowly to my mixer while it was stirring. This helped inhibit clumps from forming. Otherwise, mix it for a couple of minutes to make it smooth (200 strokes if mixing it by hand).
- Pour batter into oiled baking dish. Bake for 35-45 minutes or until a toothpick comes out clean.
- Allow to cool before spreading icing on top.

Well, I am a new stay-at-home mama (our son, Jack, was born on June 1, 2006). :) To prepare for his arrival, I cooked and froze enough food for 6 weeks. So, my new passion is OAMC, which I will try to continue at least on a small scale. It's just too hard to prepare dinner every day with an infant in my arms!
