Hearty Baked Potato Salad

I haven't tried this yet but plan to do so soon. It sounds really good. Recipe is courtesy of Taste of Home magazine. (Prep time is an estimate)

  1. In a saucepan, cover potatoes with water and boil until tender; drain.
  2. Cut into 1-1/2" chunks.
  3. Spread evenly in a 13x9x2 baking pan.
  4. Combine onion, parsley, soup, mayonnaise and yogurt; pour over potatoes.
  5. Sprinkle bacon and paprika over top of potato mixture.
  6. Cover with foil and bake at 350 degrees for 30 minutes.
  7. Uncover and bake 30 minutes more.
