Healthy Zucchini Bread

- 2 1⁄2 cups zucchini (grated)
- 1 cup sugar
- 1 cup applesauce
- 1⁄4 cup orange juice
- 3 eggs
- 1 1⁄2 cups all-purpose flour
- 1 1⁄2 cups whole wheat flour
- 1⁄4 teaspoon salt
- 1 teaspoon baking powder
- 2 -3 teaspoons cinnamon (optional)
directions
- Preheat oven to 350, grease 2 9x5 loaf pans.
- Combine zucchini and all wet ingredients in one bowl (big) and dry ingredients in a separate bowl. Add the dry ingredients to the wet in 3rds stirring well after each addition. Feel free to add a little more orange juice at this point if the batter looks dry.
- Place half the batter in each loaf pan and bake appproximately 45 minutes or until done ( a knife or toothpick inserted in the middle should come out clean).
- Enjoy (semi) guilt free :-).
