- 3 eggs
- 1 cup unsweetened applesauce
- 1 cup sugar
- 1 teaspoon vanilla
- 1 1⁄4 cups white flour
- 1⁄2 cup wheat flour
- 1⁄4 cup wheat germ
- 2 1⁄2 cups grated zucchini
- 1 teaspoon cinnamon
- 1 1⁄2 teaspoons baking soda
- 1 teaspoon salt
directions
- Beat the eggs until foamy.
- Add in the applesauce, sugar, and vanilla. Mix well.
- Stir in zucchini.
- Combine flours, wheat germ, cinnamon, baking soda, and salt.
- Combine both the dry mixture and the egg mixture.
- Bake at 325 for 1 hour.

Forget the healthy as far as taste is concerned. I prepped some people before they ate this that there was no oil or butter in the bread, just in case they were expecting something more decadent. My three-year old calls this cake, and we just have to be careful not to give it to him each day so that he still thinks cake is special. Followed the recipe exactly and wouldn't change anything. Freezes well. Very very good. Won't look for another Z bread recipe. Could play with bananas and carrots here and I bet it would work fine.

I absolutely love my job. I get to stay home with my baby and observe her growth and changes everyday. I love playing with her and watching her practice old skills and learn new ones.
