This is a recipe my husband's mom makes. I have modified it to be lower calories than normal meatballs.
- 1 onion, chopped
- 2 slices low-calorie bread, crumbled
- 1⁄3 cup egg substitute
- 1 lb 90% lean ground beef
- 1 teaspoon italian seasoning
- Combine all ingredients in a bowl.
- Form into balls.
- Place in large skillet and cook on medium heat covered for 15 minutes.
- Turn meatballs periodically to prevent burning.
