Healthy & Delicious Cranberry Orange Muffins

ingredients
- 473.18 ml all purpose wheat flour
- 2.46 ml salt
- 2.46 ml baking powder
- 4.92 ml baking soda
- 2.46 ml cinnamon
- 236.59 ml sugar substitute, baking splenda
- 118.29 ml packed sugar substitute, brown sugar slenda
- 9.85 ml orange zest
- 118.29 ml orange juice or 2 oranges, squeezed
- 118.29 ml jellied cranberry sauce
- 85.04 g box sugar-free orange gelatin
- 118.29 ml egg substitute
- 78.78 ml apple, sauce
- 170.09 g bag of cran raisins or 170.09 g bag dried cranberries
- 118.29 ml of chopped walnuts (optional)
- 118.29 ml crushed pecans (optional)

Topping
- brown sugar, splenda
- 4.92 ml cinnamon
- 78.78 ml of crushed pecans
directions
- Preheat Oven to 350* and then spray a 12 count muffin pan with a nonstick spray.
- Soak CranRaisens in the Orange juice and set aside.
- Sift Wheat flour with the salt, soda. cinnamon and baking powder.
- Add the Orange zest and the Powdered jello to the Flour mixture and set aside.
- Cream the Sugars and the Egg substitute until sugar is dissolved then add applesauce & cranberry sauce and mix well.
- Next add the soaked cranraisens to the egg mixture then add the chopped nuts.
- Gently add the dry mix to the wet mix until well incorporated.
- Pour batter into the muffin pans leaving enough room for the topping.
- mix the topping ingredients, ( thats a 1/2 cup of Brown Sugar Splenda) and sprinkle over the muffins before baking.
- Bake Muffins for 18 to 20 minutes depending on your oven. When muffins are done you will need to bake the last 6 muffins making the total of 18.
- These muffins will be Dense and Hearty they will FILL you. If you wish you can use 1 cup of regular All purpose flour & 1 cup of the Wheat flour and you'll get a slightly lighter muffin.

I have learned alot about cooking and baking from my Grandmother's and my Aunt's.We do a lot of canning, things like Jellies and Apple butter, Chow Chow,Mixed pickles, Strawberry jam, Gr. Beans and Pickled Beats. And my favorite is the homemade Strawberry Jam. We have even had several Mollasses Stir Offs in the Fall at my Church & we make Apple Butter and Cider. I was raised in the Southeast and we love to COOK. It must be something in the water? LOL & If it involves cooking count me in!!!
I Love the Food Network and all the cooking shows. I Have found alot of great recipes and made alot of friends from this Web site.
