Easy little winter dinner for slow-cooker.

Easy kid-friendly meal. Instead of processed cheese, I used 3 cups sharp white cheddar cheese, 1 1/2 cups swiss cheese-gruyere, and 1 1/2 cups smoked provolone (a combination simulating Provel processed cheese, but using premium ingredients). Because this was a crockpot meal, I scooped out portions. We had a hard time finding the cheese, and the special flavors of the cheeses were lost. So for this recipe, I would use orange cheddar cheese or cut up Velveeta, and not try to add a gourmet touch. I was glad that the recipe did not call for additional salt because the canned soup and the cheese gave it enough. I like to see my cheese, and know that each portion is getting its share, so I would not add the cheese to the crockpot, but put each dinner portion in a French Onion Soup bowl, sprinkle the cheese, and melt under the broiler or in the oven.   1. Add hash browns to slow cooker.
  2. Brown beef and onion in frying pan.
  3. Add meat, and then vegetables, to slow cooker.
  4. Combine soup and milk, then pour on top of of meat & vegetables.
  5. Cover & cook on LOW for 4 hours.
  6. Add cheese, cover, cook additional 30 minutes.
