- Bake potatoes at 400 for 1 hr or until tender.
- Cut each potato in half, carefully scoop out the inside of the potato leaving a 1/4 inch thick shell. Put scooped out potato in a large mixing bowl.
- In the large mixing bowl with the potato inside, add milk, cream cheese, butter, swiss cheese, cheddar cheese, salt & pepper.
- Mix the contents with a hand mixer or electric mixer until well blended.
- Stir in ham and chives.
- Spoon mixture back into potato shells.
- Bake at 350 for 15 minutes.

Made these delicious potatoes for lunch today as I'm trying to use up my ham. The cream cheese really adds a great texture and flavor to these twice-baked potatoes. I saw where you mentioned swiss cheese in the directions, but it is not mentioned in the ingredient list so I added 1/2 cup of it as well as the cheddar cheese. These potatoes make a nice lunch all on their own and even better with a side salad. Thanks for the post.
